Pineapple Mojito

A refreshing twist on the Cuban Classic; spruce it up with a bit of pineapple this winter season…
Fresh mint and pineapple are pressed with sugar syrup; add the white rum, a bit of pineapple flavouring, top it with crushed ice and garnished with a mint sprig.

1 ½ Oz. White Rum
1/3 Oz. Pineapple Sugar Syrup
1/2 Oz. Pineapple Juice
Dash of Fresh Lemon Juice
Dash of Sugar Syrup
8-12 mint leaves
Slice of Fresh Pineapple

Method:
Add Mint leaves, pineapple slice and sugar syrup into a tall glass; Muddle the fruit for 15 seconds or until the syrup turns green; Add rum, pineapple syrup, pineapple juice and dash of fresh lemon juice; Add crushed ice & Garnish with a mint sprig
